Alkaline Samoas (Girl Scout Cookies)
1/2 cup of Toasted coconut flakes (toast your coconut flakes in a fry pan for a few minutes)
7-10 Dates pitted
Blended in food processor together until forming one ball.
Form into flat cookie and put a hole in the middle (I used the end of a chopstick)
Chill the cookies in the freezer while you make the chocolate.
Melt half cup cocoa nibs and 1 tablespoon of coconut oil and agave (taste test the agave to know if you need more sweetness) by blending in a blender. Cacao nibs do not melt with heat, they melt with blending as the oils from the cacao disperse.
Dip the bottom of cookie in chocolate mix,
And drizzle on top then freeze for a few hours.
Makes 9 or so. If you take them out of the cold for long, they do soften up and the chocolate melts more.
