Alkaline Fresh Herb Bread Loaf



4 cups Spelt flour

1 Teaspoon sea salt + onion powder

Tablespoon Herbes de Provence

Fresh oregano and sage leaves from a few stems

1 cup Sparkling spring water (more or less)


Mix dry ingredients and slowly add the sparkling water, stopping to mix the dough alittle at a time. Feel free to add a tablespoon of agave if you want a sweet and savory bread.


Oven on 350, coat pan with grapeseed oil

Knead dough for a few minutes with flour covered hands on a flour covered surface. Lightly flour the surface so that you can slowly add more as needed. Wrap ball or plate in plastic wrap and sit in the refrigerator for 20-30 mins.

Place in rectangular pan, coat with grape seed oil on top of dough.

Sprinkle more sea salt, onion powder and you can add ginger or cayenne if you want a kick on the crust. Cut some lines across to make it more aesthetically appealing 😊


Bake for 55 mins or until the knife comes out clean in the middle.
